So up until today I was never really into salads because I never felt like they kept me full, but little did I know that I had been doing it all wrong.. Today I took 4-5 cups of spinach, 1/4 of an avocado, 1/4 cup of sliced onion, and Chipotle Ranch dressing (which is made with healthy ingredients and is zero calories and can be found in the produce section).. I threw it all into a huge mixing bowl and it was the best salad I’ve ever had. It was giant because of the amount of spinach I used, but it is keeping me at a really comfortable fullness & my body is loving all of the nutrients that the spinach/onion/avocado is providing for it.
Anyway, I had been eating salads that weren’t big enough and didn’t have enough vegetables in them. You can eat as much spinach as you want and never have to worry about it having any negative effects on your body.
All of this works so perfectly too because I just joined a co-op that I’m going to be getting all of my groceries from, but this week I ordered spinach and they gave me five pounds of it. Five pounds doesn’t sound like that much spinach until you realize that you have roughly a week until it all goes bad, so I’ve been eating spinach at every meal.
I can’t even express how good I feel now that I’ve eliminated most processed foods/white carbs/meats/sugars/anything else unhealthy from my diet. I am going to explore eating raw but that’s another step that I’ll have to work my way up to..
